About Nannots Coffee Lab
Nannots Coffee Lab was founded by Walter and Bianca to preserve coffees that rarely exist independently in the market.
At origin, small washed nano-lots often emerge during harvest. These separations are defined by varietal clarity, precise processing, and distinct structure. They carry the pure expression of their terroir and the hands that cultivated them. Most are too small to stand on their own. Most are blended for scale.
Nannots was created to release them deliberately.
With over a decade dedicated to specialty coffee, Walter refined his craft through hands-on roasting, structured sensory analysis, and direct collaboration with producers. Through this work, he encountered nano-lots that demonstrated unusual clarity during evaluation. These coffees expressed distinct varietals, transparent washed profiles, and harvest separations too small to be commercialized independently.
We uncover and preserve these overlooked selections.
Each drop begins at origin, where nano-lots are evaluated side by side and held to strict comparison. Most are rejected. One may be selected. Selection is guided by structure, clarity, and varietal integrity. It is not guided by novelty or trend.
If chosen, it becomes a piece.
It’s released once. It’s never reproduced. It’s permanently archived.
By rescuing and roasting these rare micro-lots with care, we create meaningful experiences that honor origin, craft, and sustainability.
Nannots does not operate on volume or continuity. Each piece represents a specific lot and harvest window that will not return.
What we are building is not a catalogue of coffees.
It’s a growing archive of rare selections that would otherwise disappear.
